In OBS Studio, I often switch between a profile and scene utilizing a Logitech C920 webcam in mono audio, and a profile and scene utilizing an Elgato HD60 in stereo audio.
When I make the switch from the mono C920 profile and scene to the stereo Elgato profile and scene, the Elgato sound source shows (and records) as mono, even though it is set to stereo ( log: https://obsproject.com/logs/EwxksJRTLR0Z_fY1 )
until I restart OBS Studio (log: https://obsproject.com/logs/H5TNctlQZ7i3_Orn )
When switching a single profile between Mono and Stereo in Settings > Audio, OBS Studio shows a warning that "The program must be restarted for these settings to take effect," so I guess this may be a known issue. However, it is certainly not very intuitive when switching between mono and stereo profiles--no warning is shown in this case. If it cannot be fixed, the user should be warned in some way that they need to restart after switching from a mono profile and scene to a stereo profile and scene.
